Perfect Lemon Squares


I think I have found the perfect lemon square recipe! Some recipes require multiple layers, eggs whites, and all sorts of complicated things. But this version is simple and easy to make, takes no time at all, and has a perfect balance between filling and shortbread base. I found this one at http://allrecipes.com/, but I changed a few things around. I will definitely be saving this recipe! See my version below:


Ingredients

  • 1 cup butter, softened
  • 1/2 cup white sugar
  • 2 cups all-purpose flour
  •  
  • 4 eggs
  • 1 1/2 cups white sugar
  • 1/4 cup all-purpose flour
  • 2 lemons, juiced

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. Press into the bottom of an ungreased 9x13 inch pan.
  3. Bake for 15 to 20 minutes in the preheated oven, or until firm and golden. In another bowl, whisk together the remaining 1 1/2 cups sugar and 1/4 cup flour. Whisk in the eggs and lemon juice. Pour over the baked crust.
  4. Bake for an additional 20 minutes in the preheated oven. The bars will firm up as they cool. When fully cooled, sprinkle with icing sugar for extra sweetness.

Lemon Blueberry Crumble Bars

I have decided to try and make it a routine for the rest of the summer to bake something new every Sunday night, and blog about it that evening. So as of now, look for posts every Sunday, and various updates throughout the week!

I have also decided, that anything with fruit in it is to die for, especially blueberries! This wonderful recipe was found on My Baking Addiction, one of my favourite websites. It's a relatively simple recipe, and the outcome is worth it. These bars, were amazing. I had to go back for seconds...and thirds.

Peach and Strawberry Cobbler


My first posting! And this delicious cobbler deserves to be the first one, for sure. It was perfect for a family dinner in this warm summer weather, my family and I sat outside and enjoyed it. It takes about 30 minutes to prepare (but I like to take my time) and 40-45 minutes to bake. I found this recipe from the Smells Like Home blog, click here for the full thing.



Mine didn't turn out as pretty as the original, but I'm sure it tasted just as great. It was delicious!
